Tabbouleh is a healthy salad because of the vitamins and minerals it provides. The bulgur wheat is a good source of calcium, with 18 mg per cup, which helps maintain good skeletal structure and cellular growth. With 124 mg of potassium, in addition to 58 mg of magnesium, your body’s muscle function, organs and tissue will benefit from tabbouleh. The tomatoes in tabbouleh are a good source of vitamin C to assist the immune systems and help prevent disease. Tabbouleh also provides a good source of iron at 1.75 mg per cup and trace minerals selenium, copper, zinc and manganese, according to the U.S. Department of Agriculture’s national nutrition database.
